Oatmeal Scotchies

 1 cup Butter
 1 ½ cups Brown Sugar
 ½ cup Sugar
 2 Eggs
 2 tsp Vanilla Extract
 1 tsp Baking Soda
 1 tsp Salt
 1 tsp Cinnamon
 ½ tsp Nutmeg
 2 ½ cups Flour
 2 cups Oatmeal
 1 cup Butterscotch Chips

Preheat the oven to 350 degrees.

Cream together the butter and sugars in a mixer until the mixture turns a light brown color and it fluffy.

Add in the vanilla, salt, baking soda, cinnamon, nutmeg, and eggs. Scrape down the sides of the bowl a couple of times until the batter comes to a smooth consistency all the way through.

Add in the flour, 1/2 cup at a time until the batter becomes slightly thick.

Lastly, add in the oatmeal and butterscotch chips until evenly dispersed through the dough.

Roll balls and press slightly down on a greased cookie sheet, then bake for 8-10 minutes. The edges will look slightly golden!

After 5 minutes out of the oven, transfer the cookies from the cookie sheet to a wire rack to cool.
