Blackberry Pie Bars

So I’m not sure if there’s anything more “summer” than blackberries! I remember growing up going out to the back yard and picking bowls full of blackberries to snack away on…. leaving me with very colorful finger tips. But really, they are sweet, refreshing, and oh so tasty in a dessert!

These blackberry pie bars are the best of both worlds… pie crust bottom that gets to soak up the juices of the blackberries, and then the crumble topping of the bar that gets a little crunchy in the oven.

I find that this pie dough is my new favorite, and have actually used it for pies as well. The secret… lemon zest! It makes this dessert so refreshing and light, and gives a little zazz to any pie or bar that you are making.

To Make the Pie Dough:

To start making this scrumptious dessert, make the pie dough! Mix together flour, white sugar, baking powder, cinnamon, salt, and the zest of one lemon. Form a well in the mixture, and add in one egg, vanilla extract,  and the butter at room temperature. You can use a wooden spoon to mix this, but that’s no fun. I like to use my fingers to mix the dough so you can break apart the butter pieces and get a beautiful soft pie dough.

Press half of the pie dough into a greased 9/13 pan until it’s nice and even. Let it rest while you make the blackberry filling!

To Make the Filling:

For the filling, wash and completely dry about 4 cups of blackberries (this ended up being two small cartons from the store for me). In a bowl, mix the blackberries, lemon juice, cornstarch, and white sugar until the blackberries are coated in the yumminess.

Pour the blackberry filling over the pie crust and spread until even.

Crumble the remaining pie dough over the top of the blackberry mixture. I tend to take a handful, and rip small pieces off. You’ll be surprised how much topping there is, but it’s the best part!

Bake in a preheated oven at 350 degrees for 45 minutes. You’ll see the top start to turn a beautiful golden brown color, and the blackberries will start peeking through the top.

Serve warm with a hefty scoop of vanilla ice cream and enjoy!

For the Dough
 3 cups Flour
 1 cup Butter
 1 cup Sugar
 1 Egg
 1 tbsp Vanilla Extract
 2 tsp Cinnamon
 1 tsp Baking Soda
 1 tsp Salt

For the Blackberry Filling
 4 cups Blackberries
 ½ cup Sugar
 Juice of 1 Lemon
 1 tbsp Cornstarch

For the Dough

Preheat the oven to 350 degrees F and grease a 9x13 pan.

Mix together the flour, sugar, baking powder, cinnamon, salt, and zest of the lemon.

Forming a well in the dry mixture, add the egg and room temperature butter.

Using your hands or a wooden spoon, mix until all the ingredients are fully incorporated.

In a greased 9x13 pan, flatten half the dough on the bottom of the pan.

For the Filling

After cleaning the blackberries and drying, place in large enough bowl to mix.

Combine the lemon juice, cornstarch, and sugar with the blackberries.

Pour the entire mixture over the bottom half of the dough.

Crumble the remaining dough mixture over the top of the filling.
