Oatmeal Scotchies
Cinnamon… Nutmeg… Butterscotch…
These cookies should be illegal! I really don’t know if I can come up with a better combination for cookie goodness. And then you add in the oatmeal to make this a substantial cookie. I’m drooling…
These cookies are born to please. I don’t know if I have ever gotten a complaint about these… except my sister used to tell me they were WAY too flat. Well obviously I’ve fixed the recipe because these are thick, chewy, and delicious!
I was able to make these for a co-worker as the second official order for Iona Bakery! Even though it was during COVID-19, we were able to take a drive and leave the goods in a mailbox. No contact delivery.
I know what you are asking – yes, it’s mandatory to have a drink while baking.
For the Dough:
You’re going to want to cream together the butter and sugars. Give this as much time as it needs. It’s super important for these cookies to allow this mixture to become whipped and creamy.
From here, add in basically everything except the flour, oatmeal, and the butterscotch chips. You are going to need to scrape down the sides a couple of times to make sure it’s fully incorporated.
Try not to eat all the dough at this point… really is the best part.
Slowly add in the flour and add extra until you have a thick-ish cookie dough. It will start to pull away from the sides of the bowl in the stand mixer and almost be dense to the touch.
Add in the oatmeal until fully combined. The oatmeal will start to collect at the bottom of the bowl, just push some of the dough on top of it with the mixer stopped and it will all incorporate.
Finally, add in the butterscotch chips until mixed evenly through the dough.
Again, try not to eat all the cookie dough at this point. It’s just so good, I know but still.
Grease a cookie sheet using your favorite method, butter wrapper, cooking spray, shortening rub… whatever floats your boat.
Using a scoop, evenly spread the cookie dough into balls and press down a little on the cookie to the desired thickness. Place the cookie sheet and put in a preheated oven at 350 degrees F. Bake for 8-10 minutes, depending on your oven. The middle will look a little pale, while the edges will just start looking a little golden.
Leave on the cookie sheet out of the oven for about 5 minutes, then move to a cooling wire rack for another 5-10 minutes before transferring to a container.
Highly recommend eating these warm with some plain vanilla ice cream.. yum.
Oatmeal Scotchies
Preheat the oven to 350 degrees.
Cream together the butter and sugars in a mixer until the mixture turns a light brown color and it fluffy.
Add in the vanilla, salt, baking soda, cinnamon, nutmeg, and eggs. Scrape down the sides of the bowl a couple of times until the batter comes to a smooth consistency all the way through.
Add in the flour, 1/2 cup at a time until the batter becomes slightly thick.
Lastly, add in the oatmeal and butterscotch chips until evenly dispersed through the dough.
Roll balls and press slightly down on a greased cookie sheet, then bake for 8-10 minutes. The edges will look slightly golden!
After 5 minutes out of the oven, transfer the cookies from the cookie sheet to a wire rack to cool.
