Vanilla Bean Cookies
Start by beating the butter and sugar on medium speed until fully creamed together. This will likely take a couple of minutes, but you'll see it start to turn a lighter color when it's done.
Add in the eggs, vanilla paste (yum), salt, and baking soda. Scrape down the sides of the bowl as needed so everything is fully incorporated.
On the lowest speed setting, stir in the flour until the dough just comes together.
Using a cookie scoop, measure out the cookie dough into even sized balls on a greased cookie sheet. Place the baking sheet with the cookie dough in the fridge for 30 minutes, or until the dough is chilled throughout.
Preheat the oven to 350 degrees F, and bake the cookies for 8-10 minutes, or until the edges just barely start to turn golden.
Cool the cookies on the baking sheet for 4-5 minutes, then transfer to a wire cooling rack to finish cooling.
